Keto Breakfast- Clean & Lean Zucchini Hash
I love easy low carb dishes that are healthy and power me up for the day! It’s my go-to dish that can easily be made for breakfast or dinner. I call these my “one-pan wonder” dishes because they are wonderful and can be made quickly when you don’t feel like cooking! No special skills needed, just grab a pan (cast iron is great) and have some fun chopping. Try any of your favorite veggies: brussels sprouts, turnips, kale, broccoli or cauliflower - these all work great! Then, add some protein like bacon, minced meat or chicken and season with spices and herbs of your liking. Top with a fried egg or avocado and your hash is done! Boom!
Here’s what you’ll need:
2 slices uncured bacon (see my free resource page for link)
1/2 small white onion or 1 clove garlic or both
1 medium zucchini, broccoli, Brussel sprouts or your favorite vegetable
1 tbsp ghee or coconut oil
1 tbsp freshly chopped parsley or chives
1/4 tsp Mediterranean sea salt
1 large egg, free-range or organic-hormone free
1/2 avocado
INSTRUCTIONS:
Peel onion, finely chopped
Slice bacon in small pieces
Put onion in a pan on medium heat, then add the bacon after a few minutes. Stir often until slightly brown
Dice zucchini in bite-size pieces
Add zucchini to the pan and cook for about 10-15 minutes. (avoid overcooking the veges)
Add chopped parsley or basil
Top with 1/2 avocado and 1 fried egg (or however you like your eggs)
